Water Spinach
Sometimes known as “Ong Choy”, this resilient plant grows in water and needs no pesticides. It is rich in cellulose, vitamins, and minerals. Eating it can lower blood sugar levels. Water spinach can be prepared by steaming, stir-frying adding to soups, etc.
Konjac
Konjac, or “Konyaku” in Japanese, is rich in amino acids, minerals and alkaloids. The effective ingredient it contains, called mannan, can lower blood sugar levels.
Coix seed
Also known by the poetic name “Job’s Tears Seeds,” these small grains can be used similar to rice or barley. The amount of carbohydrates in coix is lower than in rice, while the protein and vitamin content are three times than that of rice. The major components coixol and terpenoids have are anti-cancer, diuretic, and can lower blood sugar. It is especially indicated for diabetic patients with hypertension who suffer form excessive urination and are overweight.
